Some of the snacks our kids loved most in the past included lunch meat but we had cut back on them. A tradition that began in Xaver’s family for the holidays, we enjoy a good “cold cut platter” as a meal or as a snack. I decided to make cold cut platter inspired rollups that the kids can grab from the fridge all through summer, we can pack in lunches when school is back in session, and that are easy to pack for a picnic lunch to the beach. These quick and easy snack rollups have become a fast favorite in my family and I hope your kids will love them too.
The recipe for these rollups is really simple. Cut fruit or vegetables into slivers, about four inches long by half an inch wide. Apply your favorite preserves or mustard blend to a slice of Hillshire Farm Naturals® – Black Forest Ham or Hillshire Farm Naturals® – Honey Roasted Ham. Lay two slices of vegetables or fruit inside. Roll up and secure with a toothpick. If you want to be really fancy, you can use frilled cocktail picks instead of toothpicks to secure the roll together. To create these rollups I used cucumbers, gala apples, and marmalade.
Here are some ideas for vegetables and fruit to use inside of the rollups:
- Bell Peppers
- Snap Peas
And for spreads:
- Fig Jelly
- Orange Marmalade
- Hot Pepper or Jalapeño Jelly
- Spicy Mustard
- Mustard Blends
- Hot Sauce
- Apple Jelly
- Pomegranate Preserves
- Apricot Preserves
- Other exotic jellies or preserves
My dad used to make something similar to these rollups with jalapeño jelly, diced green chiles, and cream cheese, all rolled up in ham slices. You really can customize them to the taste of everyone in your family, highlighting seasonal vegetables and fruit all year long. I like to serve them on a platter with a few cherry and grape tomatoes from my garden. Sometimes we also add a few grapes or berries to the platter. You can keep these sealed in an air-tight container in the fridge so that they are ready for snacking and eating during the day. Four to five of these rollups makes a hearty filling lunch, perfect for a hot summer day. To make these more paleo-friendly, skip the preserves and use mustard instead.
